Today I made something special to combat the chilly desert winds blowing outside my door. I made a super hot cousin if my old standby the veg pulav. I made pepper rice.
That along with a Chinese vegetable curry and some fried chicken made lunch very quick and very special.
10-15 peppercorns coarsely crushed
2 tbsp oil
1 tsp mustard seeds.
1 chopped onion
½ cup chopped carrots
¼ cup corn
¼ cup peas
1 cup rice
Salt to taste
2 cups of water
1 tsp pepper powdered (optional)
1 tsp chopped coriander leaves
To make pepper rice take the oil and slightly warm it. Put the pepper corns and keep aside for 5 – 10 minutes. This is to flavour the oil. You may of course skip this step completely. After the flavouring remove the pepper corns and heat the oil when hot splutter mustard seeds, then add onion and fry until golden brown.
Then add carrots and fry for about a minute and then add peas and corn. Now add black pepper, rice and salt and add water, mix them well. If you want it extra spicy (as I wanted it) add the optional 1 tsp pepper powder. Bring it to a nice boil and then cover with a lid and turn heat to low. Let the rice cook till done.
Garnish it with coriander leaves and your hot and spicy pepper rice is ready.
It can be eaten with raita or any saucy curry.
