Baby Potato Fry

A very belated happy new year to all of you lovelies out there. I hope this new year is treating you wonderfully well,

My love affair with potato is very well documented, so, I will not waste your mind space singing the same old song. What I will do instead is give you the recipe for this wonderfully tasty baby potato fry. To make this you require the following things –

Baby potatoes              – 500 g

Oil                                – 2 tbsp

Sambar powder           – 3 tsp

Hing                             – a pinch

Mustard                        – ¼ tsp

Cumin                           – ¼ tsp

Split urad                        – ¼ tsp

Curry leaves                  – a few

Shallots                         – 5 – 8

Turmeric pwd                – ¼ tsp

Salt to taste

Pressure cook the baby potatoes till done. Cool and peel it, you can also leave the skin on as you can see I have left it on. Prick them all over with your knife.

In a kadai add oil, when hot add the hing, mustard seeds, urad dal, curry leaves and wait til the spluttering stops. Add the onions and sauté till light brown. Add the potatoes, sambar powder, turmeric powder, salt and sauté till totally combined. Sauté gently as we don’t want to mash the baby potatoes. Keep tossing it. Cook it in low flame till golden brown all over.

Serve hot.

How simple is that.
