Spicy Vegetarian noodle Soup

Very unusually, Doha is rather cool this year despite the fact it is the end of March already. It is raining and cool, mind you I am not complaining… I love this weather as a matter of fact… just remarking on the weather. To warm up your insides this lent season here is a spicy, easy vegetarian noodle soup.

Vegetable stock  (store-bought or homemade) – 2 cups

Button Mushrooms – 6-8 (sliced)

Celery – 2 sticks (Chopped)

Garlic – 6 (Chopped)

Soya Sauce – 1 tsp

Chillies – 3 (sliced)

Chilly Flakes – ½ tsp

Noodles – 1 packet boiled and drained

Sesame Oil – as needed



Bring the stock  to a boil and reduce it to a simmer. Meanwhile heat the sesame oil in a pan, add the garlic, celery, and sauté next add mushrooms and chilly flakes and cook over low heat for 10 minutes. Add the noodles and garlic mushroom stir fry to the stock. Add soya sauce.  Simmer for 3 minutes.

Serve topped with celery and sliced chillies.

P.S: You can also add chicken or shrimp if you want to make this non vegetarian.
