Asparagus – Potato Soup

Hi, a first in my blog…I have today a soup recipe. Are you excited as yet… no??? Well you will be excited once you see how easy it is to make this tasty and healthy soup. It is an asparagus and potato soup. Simple, a few ingredients, a bit of patience and viola the soup is ready.

Here we go to the recipe…

Ingredients

Asparagus – 2 cups

Potato – 1 (large) (chopped)

Onion – 1(diced)

Butter – 2 tsp

Low Fat Milk – 1 cup

Chicken Stock – 2 cups

Salt and pepper – to taste

To garnish (optional)

Cream – a dollop

Croutons – as per your requirement

Heat 1 tsp butter in a pan when it is hot, add the onions and sauté till pink. Add the chopped potatoes, give it a quick toss. Add the chicken stock, a bit of salt and pepper and cook covered till done.

Add the asparagus after the potatoes are cooked, give it a quick boil for a minute or two and take it off the heat. Cool it till it is room temperature. I usually make this beforehand and keep it in the fridge.

Blend the onion – potato and asparagus. In the same pan heat 1 tsp butter, add the pureed vegetables, low fat milk, a bit of salt and pepper (after tasting).

If you want to boost the flavor you can crumble a stock cube and mix it in.

When it becomes a bit thick take it off the heat and serve with a dollop of cream and croutons.

P.S: You can also make it with vegetable stock if you want to make this pure vegetarian.
