A simple salad today. Beautiful to look at, healthy and always tasty.
Beetroot – 2
Feta Cheese – 200 grams
Olives – 100 grams (I used a combination of sliced green, black and stuffed olives)
Salad greens – 1 cup
Brine in which Feta was stored – 1/2 cup
Olive oil – 2 tblsp
Salt – a pinch (as brine is salty)
Pepper – As per your preference.
Microwave or steam beetroot till done.
Line a salad bowl with salad greens.
Chop beetroot into bite sized pieces. Remove the feta from the brine and cut into same sized pieces. Toss in the olives. Give everything a quick toss.
Mix the ingredients for the salad dressing.
Add to the salad just before serving.
